Turkey Hill Christmas 'Nog Cheesecake Recipe


  • 12 ounces chocolate wafer cookies, finely ground, divided
  • 1/3 cup sugar
  • 1/4 cup melted butter
  • 4 (8 oz.) packages 1/3-less-fat cream cheese, softened
  • 4 large eggs
  • 2 cups Turkey Hill Egg Nog Ice Cream, divided, very softened
  • 2 cups powdered sugar
  • 2 tablespoons all-purpose flour
  • 1 cup whipping cream


Preheat oven to 325 degrees. Stir together ground chocolate wafers reserving 2 tablespoons for garnish, sugar and melted butter. Press mixture onto bottom of a 10-inch springform pan. Beat cream cheese at medium speed with an electric mixer until smooth; add eggs, 1 at a time, beating until blended. Add 1 3/4 cups softened eggnog ice cream and beat until blended. Fold in 2 cups powdered sugar and 2 tablespoons flour. Carefully pour mixture into prepared pan. Bake for 1 hour, turn off oven and let cheesecake stand in oven with door closed for 1 hour. Remove pan to wire rack, and let cool completely. Cover and chill at least 8 hours. Beat whipping cream at high speed with an electric mixer until stiff peaks form; fold in remaining 1/4 cup softened eggnog ice cream. Spread whipped cream mixture evenly on cheesecake and sprinkle reserved ground chocolate wafers on top.
